  • Center cut rib selection, bottom bone removed, rib bones frenched, and then tied into a circle to look like a crown. We provide color booties for bones after cooking.

  • A minimum of 6 LBS is required to make a complete circle 

    • A 12 LBS roast will be big (3 pieces tied together)​

    • Talk to your butcher to figure out how many pounds are recommended based on the number of people you are feeding
